1 largepotato(200g),chopped
1.5litres(6cups)chickenstock
6 cups(720g)frozenpeas
⅔cupmintleaves
300glegham,slicedthinly
snowpeatendrils,toserve(optional)


1 Heathalftheoilina largeheavy-based
saucepanoverlow-mediumheat;cook
leekandgarlic,stirring,for3 minutesor
untilsoftened.
2 Addpotato,stockand1 cup(250ml)
water;bringtotheboil.Reduceheat
tolow-medium;cook,covered,for 10
minutesoruntilpotatoistender.Add
5 cups(600g)ofthepeas;cookfora
further2 minutesoruntilpeasare just
tender. Remove pan from heat.
