1 Preheatovento160°C/140°Cfan.
Greasetwooventrays;linewith
bakingpaper.
2 Beatbutter,vanillaandsiftedicing
sugarina smallbowlwithanelectric
mixeruntillightandfluffy.Transfer
mixturetoa largebowl;stirinsifted
flourandcornflour,intwobatches.
3 Withflouredhands,roll2 rounded
teaspoonsofmixtureintoballs(you
shouldhave 48 balls);place2.5cm
apartontrays.Flatteneachslightly
witha flouredforkinto4cmrounds.
4 Bakebiscuitsfor 15 minutesuntil
a biscuitcanbepushedgentlywithout
breaking.Leavebiscuitsontraysfor
5 minutesbeforetransferring to wire
rackstocool.
5 Makebuttercream.
6 Sandwichbiscuitswithbutter
cream.Justbeforeserving,dust
withextrasiftedicing sugar.

¾ cup(110g)self-raisingflour
¼ teaspoonbakingpowder
150gbutter,melted
¼ cup(80g)raspberryjam
¼ cup(20g)moistcoconut flakes


PINKMARSHMALLOW
1 cup(220g)castersugar
1 cup(250ml)water
1½tablespoonspowderedgelatine
½ teaspoonvanillaextract
Fewdropsrosepinkfoodcolouring


1 Preheattheovento170°C/150°Cfan.
Greasea 20cmx 30cmslicepan.Line
thebaseandlongsidewithbaking
paper,allowingthepapertocome3cm
abovethetopofthepan.
2 Combine sugar, semolina, flour and


bakingpowderina largebowl.Stirin
meltedbutter;mixuntilwellcombined.
Pressmixturefirmlyoverbaseof
preparedpan.Bakeonlowershelffor
25 minutesuntilbrowned.Cool
completely.
3 Meanwhile,makePinkMarshmallow.
4 Liftthebasefromthepanandplace
ontoa board;spreadwithjam.
5 Spreadmarshmallowoverjam,then
sprinklewithcoconut.Standslicefor
1 houroruntilsetbeforecutting.

PINKMARSHMALLOW
Combinethesugarandwaterina
mediumsaucepan;sprinkleovergelatine.
Stiroverlowheatuntilsugarisdissolved.
Bringmixturetotheboil;boil,uncovered,
overmedium-highheatfor7 minutes.
Removethesaucepanfromtheheatand
transfermixturetothebowlofanelectric
mixer.Addvanillaandfoodcolouring
togelatinemixture;beatonhigh
speeduntilthickandfluffy. Coolto
room temperature.
