SPAGHETTIBOLOGNESE
PREP+ COOK TIME 1 HOUR 20 MINUTES
SERVES 4

1 tablespoonextravirginoliveoil
1 largebrownonion(200g), peeled
andchoppedfinely
2 clovesgarlic,crushed
600gmincedbeef
1 largecarrot(180g),peeledand
gratedcoarsely
2 tablespoonstomatopaste
1½cups(375ml)beefstock
800gcannedcrushedtomatoes
2 teaspoonsmixeddriedherbs
375gspaghetti
Parmesanandfreshbasil,toserve

1 Heattheoilina largesaucepanon
mediumheat.Sautetheonionandgarlic
untiltheonionissoft.
2 Addbeef;stiruntilbeefisbrown,
breakinguplumpswiththebackofthe
spoon.Addcarrotandtomatopaste;stir
for5 minutes.Addstock,tomatoesand
theherbs;turnuptheheatandbringto
boil.Reduceheattolowandsimmer,
covered,for 30 minutes;stirringthe
mixtureoccasionally.Simmeruncovered
foranother 30 minutesuntilslightlythick.
3 Meanwhile,about 10 minutesbeforethe
bolognesesaucewillbeready,bringa
largesaucepanofwatertotheboil.Add
thespaghettiandcookfollowingpacket
instructions.Drainandsetaside.
4 Usetongstodividespaghettiamong
fourservingbowls.Spoonthebolognese
sauceoverthespaghetti.Servetopped
with shaved parmesan and basil.

Sautethe onionuntilsoft,thenaddthe
mince.Cookingtheonionbeforeadding
themincegivestheoniona chanceto
carameliseinthepanandgivesyour
bolognesea lovelyrichflavour.Onceyou
addyourmince,ensuretheheatstayshigh
and constant, as you don’t want it to stew.

Addthecannedcrushedtomatoes,beef
stockandmixeddriedherbsintotheonion
andmincemixture.Mixeddriedherbswill
typicallybea combinationofdriedthyme,
rosemary,marjoram,basilandoregano.
Bringtoboilandreduceheattolowand
simmer, covered, for 30 minutes.

Cookyourspaghettiina largesaucepan
ofboilingsaltedwater.Whenaddingthe
spaghettitosaucepanofboilingwater,fan
it outwithyourhandtotryandkeepstrands
ofspaghettiseparatesotheywon’tstick
together.Stirspaghettiwithlong-handled
tongsa fewtimeswhileit’scooking, again to
keep the pasta from sticking.

Onceyourpastaiscookedaccordingto
thepacketinstructions, carefullypour
thespaghettiintoa colanderoverthesinkand
drainoffthewater.Don’trinsethepasta, as
thiswashesawaythestarchontheoutside,
whichiswhathelpsyourlovelysauceclingto
thespaghetti.Divideintoservingbowlsand
spoon the bolognese sauce over the top.
