1 cup(160g)pureicingsugar, sifted
1 egg
3¼cups(485g)plainflour
500gstrawberries,sliced crossways

PASTRYCREAM
1/3 cup(75g)castersugar
2 tablespoonsplainflour
2 tablespoonscornflour
1 teaspoonvanillabean paste
1 cup(250ml)milk
4 eggyolks
300mlthickenedcream

STRAWBERRYCOMPOTE
2 tablespoonscastersugar
1 tablespoonlemonjuice
2 tablespoonswater
250gstrawberries,slicedcrossways

1 Beatbutterandsugarina smallbowl
withanelectricmixeruntillightand
fluffy.Beatinegg.Transfertoa large
bowl;stirinflourtoforma softdough.
Kneaddoughona lightlyflouredsurface
untilsmooth.Dividedoughintofour
portions;encloseeachportioninplastic
wrap.Refrigeratefor 30 minutes.
2 Linefouroventrayswithbakingpaper.
Rolleachportionofdoughona lightly
flouredsurfacetoabout3mmthick.
Cuteachportionintoa 22cmround.
Placeroundsontrays;prickallover
witha fork.Refrigeratefor 15 minutes.
3 Meanwhile,preheatovento
180°C/160°Cfan.
4 Bakeroundsfor 10 minutesuntillightly
browned.Coolontraysfor5 minutes
beforetransferringtowirerackstocool.
5 Meanwhile,makepastrycreamand
strawberrycompote.
6 Placeoneroundona cakestandorplate;
topwitha quarterofthepastrycreamand
a thirdoftheslicedstrawberries.Repeat
layeringtwomoretimes.Finishwiththe
fourthroundandlastquarterofcream.
Spooncompoteontop,drizzledwithsyrup.
7 Serveshortcakedustedwitha little more
sifted icing sugar, if you like.

mixeruntilsoftpeaksform.Foldcream
intocoldcustard,intwobatches.

STRAWBERRYCOMPOTE
Stirsugar,juiceandthewaterina small
saucepanoverlowheatuntilsugar
dissolves.Bringtotheboil;simmerfor
5 minutesoruntilthickenedslightly.
Add strawberries; remove from heat. Cool.
