FRANGIPANE
150gbutter,softened
¾ cup(165g)castersugar
3 eggs
1 cup(120g)groundalmonds
2 tablespoonsplainflour

1 Placea largeoventrayintheoven;
preheatovento200°C/180°Cfan.
2 Greasean11cmx 34cmrectangular
loose-basedtarttin.Placesheetsof
pastry,endtoend,overlappingby3mm,
ona worksurface.Usingthetipofa
knife,pressoverlapsslightlytojoin
pastry.Cut5cmfromthelengthofthe
pastry;discardtrimming.Liftpastryinto
tin;easeintobaseandsides,trimexcess
pastry3mmbeyondtheedge.Freeze
for 10 minutes.
3 Meanwhile, make frangipane.

4 Linepastrywithbakingpaper;fillwith
driedbeansorrice.Bakefor 10 minutes.
Removepaperandbeans;bakefora
further8 minutesoruntilpalegolden
andalmostdry.
5 Spreadfrangipaneontobaseofpastry
case;smoothsurface.Bakefor 20 minutes
oruntilpastryisgoldenandfrangipaneis
puffedandgolden.Standfor 10 minutes
beforeremovingfromthetin.
6 Meanwhile,placesugarona plate.
Halvefigs,thenpresscutsidesonto
sugartocoatwell.Heata largefrying
panoverhighheat.Whenpanishot,
placea pieceofbakingpaperonthebase
ofthepan(makesurethepaperdoesn’t
extendbeyondtheedgeofthepanorit
maycatchonfire).Placehalfthefigs,
cut-sidedown,inpan;cookfor 3
minutesoruntilfigsarecaramelised.
Turnover;cookfora further 30 seconds.
Removefrompan.Repeatwithremaining
sugaredfigs.
7 Placewarmtartona servingplate;
topwithfigs,drizzlewithhoneyand
sprinklewithalmonds.Dustwithicing
sugarandservewith cream, if you like.

process briefly until mixture is combined.

8 slicesprosciutto,torn
¼ cupfreshsageleaves
2 teaspoonsfinelygratedlemonrind
250gsmokedmozzarella,slicedthinly
60gbabyrocketleaves
1½tablespoonsbalsamicvinegar
1 tablespoonextravirginoliveoil
4 largefreshfigs,quartered


1 Preheatovento220°C/200°Cfan.
Linefouroventrayswithbakingpaper.
2 Cooksweetpotatoinboilingwater
for5 minutesoruntiltender;drain.
3 Placefourwrapsontrays;sprinkle
withparmesan.Topwithremainingfour
wraps,thensweetpotato,prosciutto,
sage,rindandmozzarella.Bake,in
twobatches,for 12 minutesuntil
goldenandcrisp.
4 Combinerocket,vinegarandoilina
largebowl.Dividefigsandrocket
mixture between flatbreads.
