⅓cup(45g)choppedpistachios
¼cupdillsprigs
¼cupcorianderleaves
¼cupmintleaves
¼cup(60ml)limejuice
⅓cup(80ml)oliveoil
1 clovegarlic,crushed
Lime wedges, to serve


1 Placecouscousand1 cup(250ml)
boilingwaterina largeheatproofbowl.
Cover;standfor5 minutesuntilliquidis
absorbed,fluffingwitha forkoccasionally.
2 Meanwhile,placepeasandsugarsnap
peasina mediumheatproofbowl;add
enoughboilingwatertocover.Stand
for1 minute,drain.Refreshinanother
bowloficedwater;drain.
3 Addpeastocouscouswithgreenonion,
capsicum,avocado,halfthepistachios
andherbsina largebowl.
4 Placejuice,oilandgarlicina screw-
