Cutkernelsfromcobandaddtomashwith2 choppedgreenonions;
seasonandmix.Shaperounded⅓-cupfulsintopatties.Place½cup
(90g)riceflourina bowl.Whisk2 eggsina bowl.Put1¾cups
shreddedcoconutina thirdbowl.Dustpattiesinflour,dipinegg,
coatincoconut.Refrigeratefor 15 minutes.Heat¼cup(60ml)oil
ina fryingpanoverlow-mediumheat.Cook,inbatches,for
3 minutes each side until golden. Drain on paper towel.

oilina largenon-stickfryingpanovermediumheat.Cook
tablespoonfulsofbatter,inbatches,for2 minutesoneachside
untilfrittersaregoldenandcookedthrough.Drainonpaper
towel.Repeatwithanothertablespoon of oil and the remaining
batter to make 10 fritters in total.
