quarteredlengthways
400gspringonions,trimmedto10cm

2 tablespoonsextravirginoliveoil
2 tablespoonspuremaplesyrup
1 cup(40g)looselypacked
rocketleaves
1 tablespoon lemon juice

1 Heatoilina largeheavy-baseddeep
fryingpanoverhighheat;cookchicken,
inbatches,for2 minuteseachsideuntil
browned.Removefrompan.
2 Reduceheatofsamepantomedium;
cookonion,garlic,thymeandolives,
stirringoccasionally,for5 minutesuntil
onionissoftened.Increaseheattohigh;
returnchickenandanyjuicestopan.
Addstock;bringtotheboil.Reduce
heattolow;simmer,covered,for1 hour
untilchickeniscookedthrough.Remove
chickenfrompan.Coverandkeepwarm.
3 Meanwhile,preheattheovento
200°C/180°Cfanandmakemaple
roastedvegetables.
4 Increasefryingpanheattohigh;bring
totheboil.Reduceheatslightly;cook,
uncovered,for 20 minutesoruntil
liquidhasreducedto1 cup(250ml).
Addjuice,seasontotaste.
5 Servechickenwith reduced mixture
andvegetables.

syrup,season,thentosstocoat.Roast
for 40 minutes,turninghalfwaythrough

mediumbowl;seasontotaste.Justbefore
serving, toss rocket through vegetables.
