400gcannedcrushedtomatoes
1 tablespooneachcoarselychopped
fresh flat-leaf parsley and mint


4 babynewpotatoes(160g),slicedthinly
4 x 220gskinlesssalmonfillets
1 mediumlemon(140g),slicedthinly
Couscousandflat-leafparsley,toserve

1 Preheatovento200°C/180°Cfan.
2 Heatoilinfryingpan;cookonion
andgarlic,stirring,untilonionsoftens.
Addtomatoesandherbs;bringtoboil.
Simmerforabout5 minutesuntilmixture
thickens and reduces slightly. Season.

3 Placepotato,slightlyoverlapping,
ontofour30cmx 40cmpiecesofbaking
paper;topwithsalmon.Spoontomato
mixtureoversalmon;topwithlemon.
Foldpapertoenclosefish.
4 Placeparcelsona bakingtray;bake
