600gskinlessoceantroutfillet,cutinto
4 even-sizedpieces
2 sheetspuffpastry(375g), cut in half
1 egg,beatenlightly

1 Bringa mediumsaucepanofsalted
watertotheboil.Addspinach;blanchfor
1 minute.Drainwell;immediatelyplace
inicedwateruntilcold.Drain;squeeze
outexcessmoisture.Patverydrywith
papertowel.Finelychopspinach;place
ina mediumbowl.
2 Combinemustard,aïoli,rind,honey
andherbsina smallbowl.Add
2 tablespoonstospinachmixture.
3 Preheatovento220°C/200°Cfan.
Linea largeoventraywithbakingpaper.
4 Laya pieceoftroutononesideofeach
pastrypiece;topeachwitha quarterof
thespinachmixture.Foldoverpastryand
sealedges,turningtheendsover.Cut
threeslitsacrosstopofpastrytoallow
steamtoescape;brushwitheggwash.
5 Placeoceantroutparcelsonlinedoven
tray.Bakefor 25 minutesoruntilpastry
isgoldenandpuffed.
6 Servehandpieswithremaining
mustard herb mayonnaise.

well.Cooksalmonona heatedoiledgrill
plate(orgrillorbarbecue)untilbrowned
bothsidesandalmostcookedthrough.
2 Meanwhile,boil,steamormicrowave
beansandpeas,separately,untiltender;
drain.Combinebeans,peasandhalfthe
mintina mediumbowl;seasontotaste.
3 Combinebuttermilk,limejuiceand
remainingmintina smalljug;season
totaste.
4 Servefishwithbeanmixture; drizzle
with buttermilk dressing.
