1 (130g)Lebanesecucumber,chopped
1 cuplooselypackedfreshflat-leaf
parsleyleaves,choppedcoarsely
2 tablespoonsextravirginoliveoil
1 tablespoonfinelychoppedpreserved
lemonrind(seenotes)
¼teaspoongroundcumin
1 teaspoonpomegranatemolasses

1 Bringa largesaucepanofwaterto
theboil.
2 Witha sharpknife,lightlyscorea
crossinthebaseofthetomatoes.Drop
tomatoesinthewaterandcookforabout
30 seconds.Removewitha slottedspoon
andtransfertoa bowloficedwater.
Whencooled,drainina colander,then
peelawaytheskins.Cuttomatoesinhalf
andscoopoutseeds;chopcoarsely.
3 Transferthetomatoestoa medium
bowlandaddtheremainingingredients.
Seasongenerouslywithseasaltand
freshlygroundblack pepper, and toss
to combine.

servingplatter.
2 Squeezethejuicefromtheoranges



  • youwillneed⅔cup(160ml)juice.
    3 Combinethejuice,orangeblossom
    water,cuminandoilina jug.Stirto
    combine,thenpourthedressingover
    thesalad.Scatter mint over the top.

4 (375g)greenbullhornchillies
(seenotes)
2 tablespoonsextravirginoliveoil
1 tablespoonlemonjuice
1 clovegarlic,choppedfinely
¼teaspoongroundcoriander
½cupcoarselychopped fresh
corianderleaves

1 Heata barbecuegrillorgrillpanover
mediumheat.
2 Grillthechillies,turningoccasionally,
forabout 15 minutesuntilsoft.
Transferchilliestoa board;coolfor
a fewminutes,thenpeelawaytheskin.
Removetheseedsandslicelengthways
intoribbons.
3 Putthechilliesintoa bowlwiththe
remainingingredientsandgently
fold to combine. Season to taste.
