½ teaspoongroundwhitepepper
½ teaspoonseasaltflakes
4 x 300gchickenMarylands
2 cups(500ml)chickenstock
8 (160g)freshdates,pitted,halved
12 small(35g)greenolives
Herbedcouscous,to serve(seeright)


SAFFRONYOGHURTSAUCE
1 generouspinchsaffronthreads
1 tablespoonboilingwater
1 cup(280g)Greekyoghurt
1 clovegarlic,crushed
1 tablespoonlemonjuice


1 Preheattheovento200°C/180°Cfan.
2 Combinetheoil,Moroccanseasoning,
cinnamon,pepperandsaltina bowland
stirtocombine.
3 Putthechickenpiecesintoa deep
bakingdishthatislargeenoughtohold
theminonelayer.Rubtheoilmixture
overthechicken.Pourthestockintothe
baseofthedishandaddthedatesand
olives.Bakeintheovenfor1 houror
untilthechickeniscookedthrough.
4 Makethesaffronyoghurtsauce.
5 Servethechickenpiecesona bed
ofherbedcouscouswiththeSaffron
YoghurtSauceanda selection of salad
accompaniments.

Placethesaffronina mediumheatproof
bowlandaddtheboilingwater.Stand
for5 minutes,thenaddtheremaining
ingredients. Stir to combine.

almonds,toasted
¼cupfreshflat-leafparsley

1 Addcouscoustoa mediumheatproof
bowl,addbutter.Pouroverboilingwater
andcoverwithplasticwrap.Standfor
5 minutesoruntilallthewaterhas
beenabsorbed.
2 Fluffcouscouswitha forktoseparate
thegrains.
3 Stirinzest,juiceandoil.Toserve,
transfertoa servingdishandsprinkle
with almonds and parsley.
