and day,” says Hyman. The chicken-
veggie blended burger was so much
more juicy and delicious, like a real
chicken burger. “That was kind of the
click, when we understood what we
were working with,” he says.
“This is close to the final formula-
tion,” Hyman tells me as he lifts the
crispy nugget up out of the oil with a
wire skimmer and drops it onto my
plate to cool. “But...we’re still tweak-
ing here and there.” I slice the nugget
in two; it’s white on the inside, sort of
