O250g butter, plus extra for greasing
O4 medium eggs
O250g dark brown soft sugar
O100g caster sugar
O1tsp almond extract
O200g self-raising flour
O100g wholemeal spelt flour
O50g ground almonds
O2tsp baking powder


O125g Bramley apples, peeled,
cored and thinly sliced
O250g blackberries
O25g flaked almonds

1 Preheat the oven to 180°C (160°C
fan oven) gas mark 4. Grease and
line a 23cm x 30cm traybake tin
with baking parchment.
2 Melt the butter and leave to cool for
a few minutes. Whisk the eggs and
sugars together until thick and lighter
in colour. Gradually whisk in the

melted butter and the almond extract.
3 Gently but quickly fold in the flours,
ground almonds and baking powder.
Turn half of the mixture into the prepared
tin and smooth out. Cover with the
apple slices, then spread over
the remaining cake mixture. Scatter
over the blackberries, followed by
the flaked almonds.
4 Bake for 30-40min, until golden
and the edges of the cake pull away
from the tin. Leave to cool for 10min,
then turn out on a wire rack.

Blackberry and apple traybake
Blackberries and apples are a classic combination. You can also serve this
cake warm for pudding with a generous helping of clotted cream.
