MAKES about 550g
PREPARATION TIME 15 min u t e s
COOKING TIME 35 minutes

O225g blueberries
O2 large bay leaves
O50g unsalted butter
O225g caster sugar
O1tsp vanilla extract
O3 medium eggs, beaten

1 Put the blueberries into a pan with a
splash of water and the bay leaves. Bring

to the boil, then simmer for 5-10min, until
soft. Tip into a sieve set over a bowl and
push with the back of a spoon to extract
as much purée as possible.
2 Melt the butter and sugar with the
purée and vanilla in a heatproof bowl
set over a pan of gently simmering
water. Strain in the eggs to remove
any threads. Keep stirring for 20-25min,
until thickened, taking care not to
overheat or the eggs will scramble.
3 Pour into sterilised jars, seal and label
when cold. Eat within one week.
