gel food colouring

1 Smoothly frost the cake with a thin
layer of buttercream and chill in the
refrigerator for 15 minutes. Divide the
remaining buttercream among three or
four bowls and tint them various
shades of coordinating colours.
2 Set the cake on a rotating cake
stand. Load the edge of an icing
smoother with a bit of coloured
buttercream. Gently press the
buttercream-coated edge to the side

of the cake and use the cake stand to
spin the cake as you smear on the
buttercream. Use the icing smoother
and buttercream like spackling paste,
adding and smearing on small amounts
of the buttercream in layers. Continue
until the entire cake is covered. Use an
of fset spatula to fill in any gaps and
clean up the top edge of the cake.
3 Repeat the process on the top of the
cake, holding the icing smoother
nearly perpendicular to the top of the
cake. Keeping the cake cold will create
the layered, textured effect. Chill the
cake bet ween layers of but tercream
as needed.
