Zigzag cake
1 Place a small dollop of buttercream
on top of the cake and smooth it with
an of fset spatula. Using the edge of
an icing smoother or the back of a
paring knife, gently score the sides of
the crumb - coated cake in roughly
2.5cm (1in) intervals.
2 Fill a piping bag fitted with a small star
nozzle ( W ilton #18) with but tercream.
Holding the piping bag perpendicular to
the side of the cake, use even pressure
to pipe zigzags back and forth between
the scored lines. Start at the bottom of
the cake and work your way up.
Continue around the cake until the sides
are covered.
