2tsptamarindpaste
400mlreduced-fatcoconutmilk
600gcarrots,peeledintolong,thin
‘noodles’usinga vegetable peeler
orspiralizer
20gflakedalmondsand2 redchillies,
deseeded and finely chopped, to serve

CHECKTHATYOU HAVE
4tspoliveoil
2–4garliccloves,crushed
2 verylowsaltvegetablestockcubes,
dissolved in 400ml boiling water (see tip)

1 Trimthelemongrassstalks,discarding
theouterlayer,andchopfinely.Drain
andrinsethetofu,patdrywithkitchen
paperandcutinto2cmcubes.
2 Heat2tspoilina largenon-stickfrying
panovera mediumheat,addthetofu
andfryfor 10 min,turningoccasionally.
Seasonwithgroundblackpepper.
3 Meanwhile,puttheremainingoilina
largepansetovera mediumheat.Add
thelemongrass,gingerandgarlicand
stir-fry for 2 min, then add the broccoli

andstir-fryfora further3 min.Add
thetamarindpaste,coconutmilk,stock
andcarrotnoodles.Bringtoa simmer,
cookfor5 min,thenaddthetofucubes.
4 Spoonthelaksainto4 bowls.Scatter
over the almonds and chillies to serve.
