Blueberrypikelets

175g self-raising flour
175g skimmed milk
1 egg
1tsp vanilla extract
1tbsp runny honey
125g blueberries, fresh or frozen
Spray olive oil

1 Sift the flour into a large bowl.
Whisk together the milk, egg,
vanilla and honey in a jug. Slowly
whisk the egg mixture into the
flour until combined and smooth,
then stir through the blueberries.
2 Spray a large non-stick frying
pan with olive oil and set over
a medium heat. Put heaped
tablespoons of the
mixture into the pan,
spacing them well apart.
Cook for 1–2 min until
bubbles appear on the surface,
then turn and cook for a further
1 min or until golden. Repeat to
make 16 pikelets. Cool and serve,
or store in an airtight container.
