Cheffing
You can do better than
a Pot Noodle – both
in terms of flavour and
nutrition. “These can be
cooked in the forest or on
the beach with minimal
kit,” says Simon Stallard,
chef at Cornish feast spot
the Hidden Hut. His basic-
ingredient recipes are
simple but satisfying

For...
A Breakfast Refuel
Eggy Bread and
Black Pudding
For a moreish start to your
morning, beat some eggs with
crumbled black pudding and
coat slices of sourdough in the
mixture. Heat a flat oiled skillet
over the fire, and fry your slices
one at a time for about six
minutes. Serve with
crispy bacon and
maple syrup.

For...
Instant Energy
Camembert,
Toast and Chutney
After a hard day’s hiking, you
need to replace those calories,
and quickly. Place the whole
cheese, still in its box, inside
a pan. Pop the lid on and put

it on a rack roughly 12in from
the embers. It should melt
after 20-25 minutes. Serve
with chutney on lightly
toasted bread and – if you’re
feeling adventurous – freshly
scavenged wild herbs.

For...
A Simple Side Dish
Corn, Chilli
and Basil Oil
Bring a pan of salted water to
the boil and cook the cobs for
five minutes. Remove them,
pat dry and drizzle with basil
oil (or rub with butter). Finely
dice a fresh chilli, mix with sea
salt and coat the cobs. Stick
something sharp in either end
and eat straight off the core.
