Las Vegas: Palms Casino Resort
Unveils New Club Space
As part of its ongoing renovation, Las Vegas’ Palms
Casino Resort opened the club space Kaos in April.
The mammoth venue, comprising a dayclub pool bar
and a nightclub space, spans more than 100,000 square
feet. Kaos includes two large outdoor pools, private
cabanas with smaller pools, a live entertainment stage
and rotating DJ booth, and dance areas and bars.
Specialty cocktails ($21 a 12-ounce cup; $60 a
32-ounce souvenir cup) include The Demon, made
with a choice of Herradura Blanco Tequila or Stoli
Elit vodka mixed with Chambord liqueur, lemonade,
and lime juice, and the Kings Only, mixing Jack
Daniel’s Tennessee whiskey, St-Germain elderflower
liqueur, lemonade, and sparkling water. A selection
of frozen drinks ($28 a 24-ounce cup; $60 a 32-ounce
souvenir cup) like the Saturday Morning Matinee,
blending Ambros banana-flavored whiskey and Piña
Colada mix, are also available, joining a lengthy list
of spirits and Champagne bottle service options, from $475 a 750-ml. of Avión Blanco Tequila to $20,995 a 750-ml. of
Suntory Hibiki 21-year-old Japanese whisky. Personalized Champagne valet service is offered for upper-end marques in large-
format bottles, topping out at $295,000 for a 30-liter bottle of Armand de Brignac Rosé. Sushi, sandwiches, and snacks
($16-$27) are served a la carte, and party platters ($195-$1,000) are available for large groups.

Philadelphia: New Bar Blooms
With Draft Cocktails And Esoteric Wines
Philadelphia’s Craft Concepts Group launched Blume, a light, bright venue that
emphasizes fruit-forward cocktails and natural wines, in the city’s Rittenhouse
Square in April. The bar pours mixed drinks, wine, and local beer on draft, offer-
ing 32 taps in all. Standout cocktails include the En Blume, made with Three
Meadows Spirits Peony vodka, St-Germain and Pavan liqueurs, and lemon and
pineapple juices, and the Femme Fatale, mixing Olmeca Altos Plata Tequila,
Solerno Blood Orange liqueur, hibiscus tea, and lime juice (specialty drinks are
$10-$16). These are joined by wines like Tenuta La Favola Bianco and Dirty &
Rowdy Unfamiliar Mourvèdre ($8-$12 a glass; $25-$125 a 750-ml.), as well as a
varied selection of local beers and ciders ($6-$24 a draft pour, bottle, or can).

St. Louis: Ode To The Ozarks Opens
With Crafty Beverage Program
James Beard Award semifinalist Rob Connoley unveiled Bulrush in St. Louis’
Grand Center Arts District in April. The concept, which focuses on Ozark
cuisine classics and handcrafted beverages, offers innovative cocktails made
with homemade shrubs and local ingredients, like the Narrow Necks, mixing
Plantation 3 Stars White rum, 1220 Origin gin, Salers Gentiane aperitif, Zirbenz
stone pine liqueur, and house-made mint syrup (cocktails are $12-$14). Bulrush
also offers local beers and ciders ($7-$47 a draft pour or bottle), and boutique
wines ($12-$16 a glass; $47-$216 a 750-ml.). The concept has a daily six-course
tasting menu ($100) and serves a handful of a la carte plates ($12-$19). mw
