Freshly baked bread and cherry pie are two delicious parts of any meal. What happens to the ingredients that go into
the bread and the pie as they are heated in the oven? If you have ever done any baking, you certainly know that the
bread dough that is put into the oven changes dramatically as it bakes. Many chemical reactions occur, and one of
those reactions releases a gas that causes the bread to rise. In this chapter, you will learn about some of the basic
ways in which matter is capable of changing and how we can make sense of those changes. You will also learn how
to classify the various types of matter that are part of the world around us.
