INGREDIENTS
1 tbsp coconut oil • 4
spring onions, sliced •
2 garlic cloves, finely
sliced • 1 chilli, finely
sliced • knob of ginger,
grated • 100g button
or exotic mushrooms,
sliced • 100g sugar
snap peas, sliced • 100g
Tenderstem broccoli,
chopped • large handful
of baby spinach • 2 tbsp
tamari • 2 tbsp mirin •
2 tbsp sake • handful of
rice noodles, cooked
- handful of coriander,
roughly chopped •
squeeze of lime
METHOD
1 | Heat the coconut
oil in a large wok. Add
the spring onions and
sauté for a couple of
mins before adding the
garlic, chilli and ginger.
2 | Add the mushrooms
and sauté (add a little
more oil if needed).
Once cooked, add the
rest of the veg, plus
the tamari, mirin and
sake. Sauté for 1 min
before adding the
cooked rice noodles,
and stir around the wok
until heated through.
3 | Serve scattered
with fresh coriander
and a squeeze of lime.
Dinner is served.
