BAKED YOGHURT & HERB SALMON WITH FENNEL & LEMON
Serves: 4

Extra-virginoliveoil,fordrizzling
1 fennelbulb(190g),halved,trimmed,
coredandthinlysliced
1 leek,greenpartonly
2 largehandfulsdill,coarselychopped,
plusextratoserve
60mlfreshlysqueezedlemonjuiceand
finelygratedzestof1 unwaxedlemon
Seasaltandfreshlygroundblack
pepper,totaste
4 × 150-200gskinlesscentre-cut
salmon fillets, pin-boned
125g goat’s or sheep’s yoghurt

1 largehandfulmint,coarselychopped,
plusextratoserve
35gpinenuts,lightlytoasted

Pre-heattheovento200°C/gasmark6.
Drizzlesomeoliveoilintoa 30cm× 20cm
bakingdish.Addthefennel,leekandhalf
thedill.Drizzlewitha littlemoreoiland
halfthelemonjuice.Seasonwithsalt
andpepper.Tosstocombine.Bakefor
10 minutes,oruntilthevegetablessoften.

Removethedishfromtheovenand
arrange the salmon pieces on top of the
vegetables. Drizzle with some oil, pour

overa littlemorelemonjuiceand season
withsaltandpepper.

Topeachsalmonfilletwitha dollop of
yoghurt,spreadingit overthesurface in an
evenlayer.Scatterwithsomemint and dill
andthelemonzest.Returnthe dish to the
ovenandbakeforanother 10 minutes, or
untilthesalmonis almostcompletely cooked
through(oruntilcookedtoyour liking).

Servethefishscatteredwith more mint,
theremainingdill,thepinenuts and a drizzle
of extra-virgin olive oil. This dish also pairs
perfectly with roasted cherry tomatoes.
