CARROT AND GINGER PATTIES WITH CREAMY POTATOES

Carrotandgingerpatties
1 egg
500gcarrots, peeledandfinelygrated
15gfreshgingerroot,peeledandfinely
grated
8 sprigsof dill,frondschopped(optional)
75grolledoats
½ tspseasalt
Oliveoil,forfrying


Creamypotatosalad
500gbabypotatoes,washed
1 tspcoarseseasalt
4 eggs
8 sprigsof dill,roughlychopped(optional)
250mlplain,unsweetenedGreekyoghurt
200gcucumber,toppedandtailed
8 blackolives,pittedandroughlychopped


2 tbsp baby capers, rinsed and drained
Sea salt and freshly ground black pepper

Tomakethecarrotandgingerpatties,
cracktheeggintoa largebowland
whisk.Addthecarrots,ginger,dill,oatsand
saltto thebowlandmixtogether.Formintoa
ballin thebowlandsetasideforat least 15
minutesforthemixtureto ‘glue’together.

Meanwhile,preparethepotatosalad.
Cutthepotatoesintobite-sizedpieces
andcoverwithwaterin a mediumsaucepan.
Addthesaltandbringto theboil,thenreduce
theheatandgentlyboiluntilcooked.

Puttheeggsintoa smallsaucepan,
coverwithwaterandbringto theboil,
thenreducetheheatandgentlyboilfor 10
minutes.Whilethepotatoesandeggsare
cooking,mixtogetherthedillandyoghurtin a
largebowl,andseasonto tastewithsaltand
pepper.Cutthecucumberin halflengthways

before thinly slicing and adding to the bowl
along with the olives and capers.

When the potatoes and eggs are
cooked, remove from the heat, drain
andset aside to cool completely. Peel the
eggs,cut into quarters and add to the bowl
alongwith the potatoes. Gently toss together
andset aside.

To finish off the carrot and ginger
patties, heat a little oil in a large
non-stick frying pan over a medium-high heat.
Formthe mixture into eight patties and
transfer to the pan. Fry for a few minutes, or
untilgolden underneath. Carefully flip each
pattywith a spatula and fry on the other side
fora further few minutes, or until golden.
Servehot alongside the creamy potato salad.

Sweet and easy
to make, the patties
can be eaten inside a
burger bun. You can
keep the ginger
and dill for adults.
