✦ 4 x 180gsalmon
fillets, skin on
✦ 2 tbsp bottled finely
chopped ginger
✦ 1 tbsp olive oil
✦ ½ cup teriyaki
stir-fry marinade
✦ 450g pkt microwave
jasmine rice
✦ 2 bunches broccolini,
trimmed
1 Coat salmon fillets
in ginger. Heat oil in a
large, non-stick frying
pan over a medium to
high heat. Add salmon,
skin-sideup,andcook
3-4 mins each side,
or until the salmon is
cooked to your liking.
2 Pour over teriyaki
marinade and cook
a further 1 min, or until
sauce is hot.
3 Heat rice according
to packet directions.
Microwave, steam or
boil broccolini until
tender. Drain.
4 Serve salmon fillets
on a bed of rice with
broccolini. Drizzle over
hot marinade in pan.
