LAMB & ZUCCHINI
LASAGNE

✦ 1 tbsp olive oil
✦ 1 brown onion, chopped
✦ 500g lamb mince
✦ 575g jar bolognese
chunky pasta sauce
✦ 4 zucchini, thinly slice
lengthways
✦ 500g fresh ricotta cheese
(see tip)
✦ ½ cup finely grated
parmesan
✦ mixed salad leaves,
to serve
1 Preheat oven to 200°C.
2 Heat oil in a large non-stick
frying pan over high heat. Add
onion and cook, stirring, until
soft. Add mince and cook,
stirring to break up lumps,
7-8 mins until cooked. Add
bolognese sauce and season
with salt and pepper. Cook,
stirring occasionally, 5 mins
or until sauce has thickened.
3 Spread one-third of mince
mixture over the base of an
ovenproof dish (8-cup capacity).
Top with one-third of zucchini,
overlapping slices. Repeat to
make two more layers.
4 Whisk ricotta with parmesan
and ²⁄³ cup water. Spread
mixture over top of lasagne.
5 Bake 25 mins until golden.
Stand 15 mins.
6 Serve lasagne with mixed
salad leaves.
