BEEF NACHO BAKE
SERVES 4 PREP 20 MINS

✦ 1 tbsp olive oil
✦ 500g beef mince
✦ 290g pkt taco kit
✦ 400g can diced tomatoes
✦ 400g can red kidney beans,
drained, rinsed
✦ 1 cup grated tasty cheese
✦ guacamole, to serve
1 Preheat oven to 180°C.
2 Heat oil in a large non-stick
frying pan over high heat. Add
mince. Cook, stirring to break up
lumps, 5 mins or until browned.
3 Add seasoning sachet from
taco kit. Cook, stirring, 1 min.
Add sauce sachet with tomatoes,
beans and 1 cup water. Bring to
the boil, then simmer 10 mins or
until thickened. Transfer to an
ovenproof dish (8-cup capacity).
and top with combined crushed
taco shells and grated cheese.
4 Bake 30 mins or until golden.
Serve with guacamole dip.
