✦ 1 large crusty white bread roll
✦ 1 ⁄ 3 cup extra-virgin olive oil
✦ 500g roma tomatoes, chopped
✦ 2 garlic cloves, crushed
✦ 1 cup roughly torn fresh basil
leaves, plus extra leaves to serve
✦ 375g pkt fettucine
✦ finely grated parmesan, cracked
pepper, to serve
1 Tear bread roll into 2cm pieces.
2 Heat 2 tbsp oil in a large non-stick
frying pan over a medium to high heat.
Add bread and cook, stirring, 4-5 mins
until bread is crisp and golden.
3 In a medium bowl, gently toss
tomatoes with remaining oil, garlic and
basil. Season to taste.
4 Cook fettucine in a large saucepan
of boiling, salted water following
packet directions. Drain pasta and
return to pan. Add tomato mixture and
bread. Toss to combine.
5 Serve fettucine with extra basil leaves,
parmesan and cracked pepper.
