Fresh fruit gives this
side salad a sweet and
savoury contrast
SERVES 4 Boil 400g green
beans, trimmed and halved
lengthways, in a saucepan
over a medium heat for
10 mins, or until they are
just soft, taking care not
to overcook them. Drain
the beans, then transfer
to a serving bowl or platter.
Dress with the 1 tbsp extra-
virgin olive oil and juice
½ lemon, and season with
sea saltandfreshlyground
black peppertotaste.Just
before serving,topthe
salad with1 slicedyellow
peach and1 tbsptoasted
or flakedalmonds,crushed.
Garnishwithfreshherbs
to serve.

Blitz 2 x 400g cans
of cannellini beans,
a drizzle of extra-virgin olive
oil and a pinch of salt in a
food processor. Blend until
smooth. Place 2 pizza bases
on oven trays. Spread bean
puree evenly on bases,
then spread ½ cup tomato
passata evenly over puree.
Finely slice 1 packet
DON Double Smoked
LegHam. Spread ham across
top of pizza bases, making
three small nests in each for
the eggs. Crack 1 egg into
each nest (6 eggs in total)
and drizzle with garlic oil, salt
and pepper. Top with ¼ cup
chopped fresh parsley. Cook
in 220°C oven for 20 mins or
untileggs are just cooked.
Top with 200g grated
parmigiano reggiano
cheese and extra chopped
fresh parsley. Slice pizzas
and serve immediately.
