LYCHEE The juicy flesh
tastes like a more luscious,
perfumed grape. Unshelled
lychees keep for weeks
in the fridge. Eat alone, in
fruit salads, or for delicate
sweetness in a duck salad.
JACKFRUIT A huge
fruit with a richly flavoured,
sharp-sweet flesh. Use in
fruit salads, ice-cream, milk
drinks and soups. The seeds
are edible when boiled then
roasted in a pan with a little oil.
MANGOSTEEN The shiny,
purple-brown skin peels to reveal
segments of white flesh whose
refreshing, sweet-sour flavour
is similar to pineapple. Delicious
eaten by itself, or chilled and
mixed with other tropical fruits.
DRAGON FRUIT
The fruit of a pitaya
cactus. The flesh, eaten
raw, is tasty and mildly sweet,
a little like a kiwifruit. Scoop
the flesh and seeds out of the
chilled fruit with a spoon.
STAR FRUIT Also called
carombola and belimbing
(a smaller variety). Some
ripen to a pinky yellow, most
to a yellow-green. Star fruit
is very crisp and juicy, with
a mild sweet flavour.
DURIAN Durian is
famous as the fruit which
“smells like hell and tastes
like heaven”. To enjoy the
taste without the smell, cut
the flesh into pieces and soak
for a day in coconut milk.
