1 Make the fries: Preheat the oven to 425 ̊. Cut the potatoes into thin wedges; toss with 1 tablespoon olive oil and ½ teaspoon chili powder on a baking sheet. Spread in a single layer and bake, 15 minutes. Carefully remove from the oven with oven mitts and flip the potatoes with a spatula. Return to the oven and bake until golden, about 15 more minutes.
