now Icelandic yogurt is
gaining ground: Sales
of skyr, a thicker, less
tangy style that’s high in
protein and low in sugar,
rose 23 percent from
2018 to 2019, while
Greek yogurt sales fell
11 percent. In addition
to makers like Siggi’s and
Icelandic Provisions,
big-name brands
including Light & Fit are
getting in on the action.
