Fruit
Sweet-tart passion fruit
is the classic topping for a
Pavlova. Look for fresh passion
fruit with soft wrinkly skin and
scoop out the pulp. Other
tropical fruits like mango
or kiwi, or fresh berries,
taste great, too.

Peaks
Use room-temperature
egg whites for meringue—
they whip up better and the
sugar will dissolve more easily.
Vinegar and cornstarch are also
important: They help give the
meringue a marshmallowy
texture on the inside.


Pavlova is named after Russian ballerina
Anna Pavlova. She toured Australia and
New Zealand in the 1920s, and both
countries take credit for inventing the
dessert. Some people say it was inspired
by her tutu; others say it was created in
the spirit of her light, airy style of dancing.
