GRILLED CHICKEN
BLT WITH GREEN
GODDESS SAUCE
ACTIVE: 35 min l TOTAL: 35 min l MAKES: 4

FOR THE SAUCE
⅓ cup mayonnaise
¼ cup finely chopped fresh chives
¼ cup finely chopped fresh parsley
2 tablespoons chopped fresh
tarragon
1 tablespoon capers, drained
1 anchovy fillet
1 clove garlic, minced
5 teaspoons fresh lemon juice
Kosher salt and freshly ground pepper
⅓ cup sour cream

FOR THE SANDWICHES
4 thin chicken cutlets
(4 to 5 ounces each)
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
4 hamburger buns, split
Sliced tomatoes, cooked thick-cut
bacon and Boston lettuce,
for topping


  1. Preheat a grill to medium high. Make
    the green goddess sauce: Combine the
    mayonnaise, chives, parsley, tarragon, capers,
    anchovy, garlic, lemon juice and a pinch each
    of salt and pepper in a small food processor.
    Puree until bright green and smooth. Transfer
    to a small bowl and stir in the sour cream.
    Season with salt and pepper. Thin with water
    if needed. Refrigerate until ready to use.
    2. Make the sandwiches: Season the
    chicken with salt and pepper and rub with
    the olive oil. Grill, flipping once, until well
    marked on both sides and cooked through,
    6 to 8 minutes. Remove to a plate. Grill the
    buns until toasted.
    3. Serve the chicken on the buns with the
    green goddess sauce, tomatoes, bacon
    and lettuce.

POUND CAKE ICE CREAM BALLS
Roll four %-inch-thick slices pound cake with a rolling
pin until about % inch t hick. Place a small scoop of
strawberry ice cream in the center of each. Working
quickly, w rap and shape the cake around the ice cream
to make 4 balls. Freeze until fi rm, 2 to 4 hours. Grill t he
ice cream balls over medium-high heat, turning, until
marked on at least two sides, 10 to 30 seconds. Serve
w it h whipped cream and chocolate sauce.
