BASIC GRILLED CORN ON THE COB
ACTIVE: 20 min l TOTAL: 20 min l SERVES: 8

8 ears of corn
Kosher salt
Smoked paprika, for sprinkling (optional)

1.Preheat a grill to low. Peel back the husks
from the corn and remove the silk. Sprinkle
with salt and smoked paprika, if desired.
Fold the husks back over the corn.

CORN WITH
BARBECUE BUTTER

6 tablespoons unsalted butter, softened
1 small clove garlic
¼ cup barbecue sauce
1 tablespoon ancho chile powder
Kosher salt
4 ears of corn, grilled


  1. Combine the butter, garlic, barbecue
    sauce and chile powder in a food processor.
    Season with salt and puree until smooth.

  2. Spread the barbecue butter on the grilled
    corn. Season with salt.


CORN WITH
STEAKHOUSE BUTTER
ACTIVE: 10 min l TOTAL: 10 min l SERVES: 4

4 tablespoons unsalted butter
1 clove garlic, minced
¼ cup steak sauce
4 ears of corn, grilled
Kosher salt and freshly ground pepper
Chopped fresh chives, for topping


  1. Melt the butter in a small saucepan over
    medium heat. Add the garlic and steak
    sauce and remove from the heat.

  2. Brush the butter mixture on the grilled
    corn. Season with salt and pepper; sprinkle
    with chopped chives.


CORN WITH
BASIL BUTTER
ACTIVE: 10 min l TOTAL: 10 min l SERVES: 4

4 tablespoons unsalted butter,
at room temperature
¼ cup fresh basil
Grated zest of 1 lemon
1 clove garlic
Kosher salt
4 ears of corn, grilled
Freshly ground pepper
Shredded parmesan cheese, for topping


  1. Combine the butter, basil, lemon zest,
    garlic and a pinch of salt in a food processor.
    Puree until smooth.

  2. Spread the basil butter on the grilled
    corn. Season with salt and pepper; sprinkle
    with shredded parmesan.
