Think Drinks: Help the family cool off from
the heat by preparing a simple and summery

GRILLED JERK


  1. Cut chicken thighs in half to fi t the size of the slider buns. Season chicken and pineapple
    slices with jerk seasoning. For more spice and fl avor, use a healthy portion of spice rub
    on each side. Set aside.

  2. Preheat grill to medium-high. While grill heats, prep the slaw. Put half of the slaw mix into
    a large mixing bowl. Mix in one-half to a full container of Greek yogurt. Add salt and pepper
    to taste. Squeeze the juice from half of a lime into slaw and mix well. Put in fridge.

  3. Grill chicken and pineapple. Grill pineapple for 3–4 minutes on each side and chicken 6–7
    minutes on each side, until it reaches 165 ̊ or higher.

  4. Build your sliders: bottom bun, grilled jerk chicken, slaw, grilled pineapple and fi nally
    crown the KING’S HAWAIIAN slider using the top bun.

1 lb boneless, skinless chicken thighs
1 can sliced pineapple
1 bag slaw mix or shredded cabbage
1 container plain Greek yogurt (5.3 oz)
1 lime, halved
Salt and pepper to taste
