RETHINK YOUR MELON
Try cantaloupe in savory dishes for a change.
It’s delicious in salads and tastes great with
cured meats and cheese: We paired cantaloupe
gazpacho with serrano ham toast on page 59.
When you’re picking a cantaloupe, choose one
that feels heavier than it looks. If you can smell
the fruit inside, that’s a good sign!

CLEAN THOSE CLAMS
Clams are a favorite in our test kitchen: They cook
in 5 minutes! You just need to clean them first
to get rid of any sand or grit. Rinse them
under cold running water, then use
a kitchen towel to rub them
clean, or soak the clams in
cold water for 20 minutes to
loosen the grit, then drain.

GRILL YOUR GREENS
We love grilling lettuce, but for this
issue we tried grilling a new green:
collards (see page 62). Cut the
leaves into large pieces and rinse
but don’t dry them—you want
water clinging to the leaves to
help steam them on the grill. Toss
with olive oil and grill, turning, until
charred, 8 to 10 minutes, then
remove from the grill and tent with
foil for 5 to 10 minutes to steam.
You can try the same technique
with chard and kale, too.
