Wine and Dine
You don’t need to know a lot about
wine to cook with it. When a
recipe calls for white wine, like the
shrimp scampi on page 86, your
best bet is to go with something
dry and crisp—like pinot grigio or
sauvignon blanc. Avoid whites that
are overly oaky or sweet. And if
you don’t want to use wine or don’t
have any, broth (or even water)
will generally do the trick.
