Every chef knows that when you

head to Vegas, you need to think big.

So when Michael Symon brought his

hometown barbecue joint, Mabel’s BBQ,

to the Palms, he had to move beyond

just Cleveland-style ’cue. He added

Memphis, Kansas City, North Carolina

and Texas styles, and installed three

custom smokers to make it all happen.

Then he dreamed up a big secret: a

speakeasy-style supper club called

Sara’s, hidden behind a soundproof

door, where you can order 1950s-era

favorites like prime rib and bananas

Foster from tuxedoed servers.

Sara’s, a luxe
supper club, is
hidden inside!

As soon as you step into legendary

Philadelphia chef Marc Vetri’s

Las Vegas restaurant, you’re met

with a spectacular panoramic view

of the Strip. The dining room is on

the Palms’s 56th floor, and believe it

or not, the chef wasn’t immediately

sold on the location. “My restaurant

in Philadelphia is really cozy, and I

wanted this place to feel the same,”

he says. He solved the problem by

replicating as much as he could of his

original spot, including place settings,

warm service and, of course, his

beloved pastas. vetricucina.com
