to the Palms, he had to move beyond
just Cleveland-style ’cue. He added

As soon as you step into legendary
Philadelphia chef Marc Vetri’s
Las Vegas restaurant, you’re met
with a spectacular panoramic view
of the Strip. The dining room is on
the Palms’s 56th floor, and believe it
or not, the chef wasn’t immediately
sold on the location. “My restaurant
in Philadelphia is really cozy, and I
wanted this place to feel the same,”
he says. He solved the problem by
replicating as much as he could of his
original spot, including place settings,
warm service and, of course, his
