I start my day
with iced coffee.
I get jugs of
cold brew from
my restaurant
and bakery, The
Mercantile, to
drink at home
because it’s
so delicious.
I add a little cream and a little
sweetness. For breakfast I have
leftovers from yesterday’s shoot
for my new cookbook, The New
Frontier: two Key lime pie bites
and some creamy lemon pasta.
We’re shooting again today,
and if I don’t eat something
before I arrive, I’ll snack
nonstop. On normal days when
I’m working from home, I eat a
for breakfast and sometimes an
.. I nibble on a
chocolate-mint cookie, which
I used to make an icebox cake
for the cookbook.
.. I try a few forkfuls
of the egg salad I made for the
cookbook shoot today—one
version with Sriracha, one
with pesto. I made a veggie
egg salad, too, but I’m not as
interested in that one! I also
have a few bites of kung pao
cauliflower, another recipe from
the book. Let’s just call this
my second breakfast. I drink
another Diet Dr Pepper (one of

.. I try a couple of
(egg salad), I probably take
two carby bites (icebox cake).
Someone tweeted at me a while
back asking when my low-carb
cookbook was coming out.
I said, “My low-carb cookbook
comes out October 22—
and so does my high-carb
cookbook!” Truth be told, the
new cookbook is way more
high-carb than low-carb.
.. I eat four more forkfuls
of Sriracha egg salad (it’s
sooo good) as I pose with the
cookbook team for a photo.
We’re running a story about
the making of the cookbook
in the fall issue of The Pioneer
Woman Magazine. I tell the
photographer to take as long
as he needs—I could eat this
egg salad all day!
.. Because we don’t have
a strict schedule, we all eat and
work, eat and work. I try some
of the other recipes we’re
shooting: chicken–wild rice soup,
chocolate cherry cheesecake
bites and a freshly fried
doughnut hole. I’m in heaven!
Shooting a cookbook is not
good for buttoning jeans,
though. Tomorrow I will eat
only carrot sticks.
.. We wrap the shoot
and I head home armed with
short ribs and mashed potatoes
for dinner. At the shoot I used
short ribs to make pot roast
in the Instant Pot, which took
less than an hour, and I made
mashed potatoes in a second
Instant Pot, with wilted kale
to serve alongside. Note: This
meal is just for my husband,
Ladd, and my sons. I can’t eat
.. OK, I might have
had another Key lime pie bite
snack. And a
glass of pinot
noir. It was an
indulgent day.
