Batter Up

AST BUTTERMILK PANCAKES


Whisk 3 cups flour, ⅓ cup sugar, 1 teaspoon each salt


and baking powder and ½ teaspoon baking soda


in a large bowl. In a medium bowl, whisk 2 eggs,


2½ cups buttermilk, 1 stick cooled melted butter


and 1 teaspoon vanilla; whisk into the dry ingredients.


Cook ½ cupfuls in a buttered nonstick skillet over


medium heat until bubbles form and the bottom is


golden, about 3 minutes. Flip and cook until golden


on the other side, about 1 minute. Makes 12.
