Bourbon House


Mardi Gras is king cake season,


when bakers crank out sweet,


cinnamony cakes in honor of the


Bible’s Three Kings. The cakes are


topped with colored sugars—purple


for justice, green for faith and gold


for power—and are often baked


with a tiny plastic baby inside.


Bourbon House riffs on the idea with


a creamy king cake drink garnished


with purple, green and gold sugar.

MAKES: 1 drink


1 cup vanilla ice cream


1¾ ounces gold rum


½ ounce cinnamon syrup


¼ ounce orgeat (almond syrup)


¼ ounce orange juice


Purple, green and gold sanding sugar,


for sprinkling



  1. Combine the ice cream, rum,


cinnamon syrup, orgeat and


orange juice in a blender. Blend


until smooth.



  1. Pour the drink into a short glass.


Sprinkle with the sanding sugar.

FOR THE HONEY-SAGE SYRUP


1 sage leaf


5 ounces honey


FOR THE COCKTAIL


3 blackberries


1½ ounces bourbon


1¼ ounces lemon juice


1 sage leaf



  1. Make the honey-sage syrup: Bring ¾ cup


water and the sage to a boil in a small saucepan.


Reduce the heat and simmer 7 to 10 minutes.


Remove the sage leaf and stir in the honey until


combined. Let cool.



  1. Make the cocktail: Muddle the blackberries in


a cocktail shaker. Add the bourbon, lemon juice and


¾ to 1¼ ounces of the honey-sage syrup. Add ice


and shake well.



  1. Strain the cocktail into a chilled coupe glass.


Smack the sage between the palms of your hands to


release its oils, then lay across the top of the cocktail.


MAKES: 1 drink (plus extra honey-sage syrup)
