  • 1kgsevilleoranges,halved

  • 2 lemons,halved

  • 2 tbspfennelseeds

  • 2kg preserving sugar


YOU’LLALSONEED...



  • Largesaucepanorpreservingpan;
    squareofmuslinora cleanJ-cloth;
    jamfunnel;ladleorspoutedjug;
    sterilised jam jars or preserving jars


1 Squeezeoutthejuicefromallthe
citrusfruitintothelargepan,keeping
backallthepipsyoufind.Usea spoon
toscrapeoutanyremainingpulpor
membranefromthe citrus halves and
reservethattoo.
2 Quarterthejuicedcitrusshells,
thenusea sharpknifetoslicethem
intostripsofpeel.Thesecaneither
bechunkyorfine,depending how you
wantyourmarmalade.
3 Puttheslicedcitruspeelintothepan
withthejuices,thenpourin2.5litres
water.Firmlytietheretainedcitrusseeds
andanypulpormembraneintothesquare
ofmuslin/J-clothanddropit inthepan.
Scatterinthefennelseeds, then put the
panovera highheat.
4 Oncethefruitmixturecomesupto
theboil,turntheheatdownandcook
gentlyfor1½–2hours.Thepeelshould
bealmosttranslucentandverytender.
Liftoutthemuslin/J-clothbagandset
it asideina smallbowltocool.Addthe
sugartothepanandturnuptheheat.
Stirregularlytohelpthesugar dissolve
asit comestotheboil.
5 Meanwhile,squeezeallthesyrupyjuice
from the muslin/J-cloth bag directly into

thepan,makingsureyougetevery
lastdropout.Puttwoorthree saucers
inthefreezertochill.
6 Leavethefruitandsugartoboilrapidly
for 15 minutes,thentestforsettingpoint:
removea tablespoonofmarmalade,drop
it ontooneofthechilledsaucers,then
popit intothefridgefora fewminutes.
If a skinformsthatwrinklesupwhenyou
pushyourfingertipthroughthecooled
marmalade,it’sready.Takethepanoff
theheat.If themarmaladeonthesaucer
is stillveryrunny,leaveit toboillonger,
testingevery5 minutesorsountiltheright
textureis reached(somebatchescantake
overhalfanhourtoreachsettingpoint).
7 Meanwhile,preparethejars.I wash
theminhotsoapywater,givethema rinse
thenpopthemontoa trayandintoa hot
ovenfor5 minutesorso(seetips).
8 Pourthemarmaladeintothewarmjars
(ajamfunnelanda ladlemakeslightwork
ofthisjobora jugwitha spoutcanbe
equallyeffective).Putthelidsonandseal
whilestillhot.Labelwhencold,thenstore
ina dry,cool,darkplace(seetips).
