- Juice1 lime

roughlychopped, plus extra

non-stick ovenproof frying pan
1 Heattheovento200°C/180°Cfan/
gas6.Putthebaconina single
layerona bakingtray,thencookfor
10-12minutes,turningonce,until
crisp.Setaside(keepwarm),then
reducetheoventemperature to
180°C/160°Cfan/gas4.
2 Usingtheheart-shapedcookie
cutter,stampouta heartinthe
middleof2 ofthebreadslices.
Heata splashofoilinthefrying
pansetovera mediumheat.
Addthebreadsliceswiththe
heart-shapedhole,cookuntil
goldenononeside,thenflip
over,removethepanfrom
theheatandcrackanegg
into each hole. Transfer the
pantotheovenandcookfor4-6
minutesuntilthewhitesaresetbut
theyolksarestillrunny.Toastand
buttertheremainingbreadslices
andstamped-outhearts.
3 Meanwhile,mashtheavocadoin
a mediumbowlwiththelimejuice,
choppedcorianderanda pinch of
saltandblackpepper.

sandwichtogetherwiththe
