  • 250mlunsweetenedalmond milk

  • 300g golden syrup

  • 60gslightlysalted butter, cold
    andcubed

  • 75gplainflour

  • 75glightbrownsugar

  • 40grolledoats

  • Finelygratedzest1 lemon

  • 50g unsalted pistachios, chopped

    greased; deep roasting tin


1 Heattheovento180°C/160°Cfan/
gas4.Forthecrumble,putthe60g
butter,75gflour,lightbrownsugar,
oatsandlemonzestina food
processorandpulseuntilthe
mixturestartstoclumptogether.
(Ifyoudon’thavea foodprocessor,
putthebutter,flour,sugar,oatsand
lemonzestina mixingbowlanduse
yourfingertipstorubthebutterinto
thedryingredientsuntilcombined.)
2 Spreadthecrumbleoverthelined
bakingtray.Putintheovenand
bakefor 20 minutesoruntilgolden,
usinga largemetalspoonto
occasionally mix and break up the


crumble.Removefromtheoven
andbreakupthemixtureuntilit
resemblesa crumbly granola.
Coolcompletely.
3 Meanwhile,putthe125gbutter,
165gsugar,lemonzestandlemon
thymeina largemixingbowl.Using
anelectricmixer,whiskuntilpale
andcreamy(5-7minutes).Whiskin
theeggyolks,1 ata time,untilwell
combined,thenwhiskinthelemon
juice(thebatterwilllookslightly
curdled).Reducethespeedtolow
andgraduallywhiskintheflour,
thenthealmondmilk.Warm90g
ofthegoldensyrup,thenwhiskit
intothemixtureuntilcombined.
4 Puttheeggwhitesina separate
largecleanmixingbowl.Using
cleanbeaters,whiskuntilthe
whitesformstiffpeakswhenthe
beatersareremoved.Gentlyfold
theeggwhitesintothepudding
mixtureusinga largemetalspoon
(don’tworryif themixturelooks
split).Pourtheremaininggolden
syrupoverthebaseofthegreased
bakingdish,thenpourinthemixture.
5 Setthebakingdishina deep
roastingtinandpourinenough
freshlyboiledwatertocomehalfway
upthesidesofdish.Putintheoven
andbakefor35-40minutesoruntil
thepuddingislightlygoldenontop.

mixingbowluntilpale and smooth
(5-7minutes).
2 Beatintheyolks,vanilla,bothzests
andthebitters(ifusing)until
combined,thenusea metalspoon
tostirintheflourandcustard
powder– themixtureshould be
smoothandthick.
3 Mixthelemonandlimejuicesand
themilkina jug,thengraduallymix
intothepuddingmixture(seetip).
4 Ina cleanmixingbowlandusing
cleanbeaters,whisktheeggwhites
untiltheyformsoftpeakswhenthe
beatersareremovedfromthem
(thepeakswillfoldoveratthetip).
Gentlyfoldthewhiskedeggwhites
intothemixtureusinga largemetal
spoon.Pourthemixtureintothe
bakingdish,putintheovenand
bakefor 50 minutesoruntilthe
puddingisgoldenontopandthe
centrehasa veryslightwobble.
5 Removethepuddingfromthe
ovenandimmediatelysprinklewith
thegranulatedsugar.Usea cook’s
blowtorchtocaramelisethesugar
untilgolden(orputundera medium
grilltocaramelise).Serve
immediatelywithdoublecream.
