to“matchme,Sidney”.The 21 Club’ssteakdianewastakenoffthe
menuin2008,butthey’llstillmakeitonrequest.Traditionallythe
brandywasflambéedtablesideaspartofthetheatre,thoughthat
mightnotworkfora TVdinner...Thelemonandgingerfoolisa sweet
counterpoint to the film’s bitter tone, and it has a fitting sharpness.

- 2 shallots,finelysliced
- 2 tbspbrandy
- 150mlbeeforchickenstock
- 3 tbspcrèmefraîche

1 Heattheovento200°C/180°Cfan/
gas6.Tossthepotatoeswitha
drizzleofoil,thegarlic,herbsand
plentyofsaltandpepperina
roastingtray.Roastfor 25 minutes,
shakinghalfwaythrough,untilthe
potatoesaretenderandgolden.
2 Afterthepotatoeshavebeenin
theovenfor 15 minutes,heata
drizzleofoilina large,heavy-based
fryingpansetovera medium-high
heat.Seasonthesteakswithsalt
andmostofbothpeppers,then
cookinthepanfor3 minuteson
eachsideformedium-rare(or
untildonetoyourliking). Remove
andsetasidetorest.
3 Forthesauce,heata splashofoil
inthesteakpanovera medium
heat,addtheshallotsandcook,
stirring,for4-5minutesuntil
golden.Addthebrandyandbubble
ona highheatuntilmostofit has
evaporated.Addthestockand
returntotheboil,usinga wooden
spoontoscrapeupallthetastybits
fromthebaseofthepan.Turnthe
heattolow,stirinthecrèmefraîche
andhorseradish,thenseason.
4 Slicethesteakandreturntothe
panwiththesauce.Servewiththe
herbyroastpotatoes,plentyofsauce
and watercress on the side.
