Katy Salter’s protest at the
pointlessness of ready-made
pancake mixes [Feb, p130] stirred
up debate – and memories

In 1964 I was eight years old and my
mum worked three jobs, starting at
4.30am. She was a good baker but
an average cook, probably due to
the lack of time. However, Shrove
Tuesday was special. Pancakes were
whipped up for me and the local
kids, whose mums, like mine, had
busy lives. Flour, eggs and milk
were all it took; they were made in
minutes and the best part was being
allowed to flip – the fun we had is
memorable even today. I like to
think my mum made memories for
those children who came to share
the pancakes, and that they were
passed on to future generations.

The article brought many smiles as
I remembered the Pancake Days of
my childhood. I agree with Katy
about packet mixes. I tried one for
Yorkshire puddings when I was first
married and found it was just as
easy, not to mention tastier and
more satisfying, to make my own.

What a great February issue. All
this cooking keeps me sociable
as I can’t eat it all myself. I tweak
a bit here and there though –
hence individual blood orange
tarts. While you’re at it, dry some
blood orange slices to perk up
your gin later in the year.
