  • 400gBritishfilletorsirloinsteak,
    thinlysliced

  • 1 largeonion,finelysliced

  • 250gbabychestnutmushrooms

  • 2 tbspbrandy,plusa splash

  • 200mlsouredcream

  • 1 tbspdijonorEnglishmustard

  • 125mlrichbeefstock

  • Smallhandfulchoppedfresh
    parsley

  • Pasta,riceormashedpotatoes
    andsteamedseasonalgreens
    toserve


1 Heata knobofbutterina large,
deepfryingpan.Onceit’sbubbling,
addthesteakstripsandfryuntil
justbrownedbutnotcooked
through.Usetongstotransfer
themtoa plate.
2 Addanotherknobofbutterto
thepan,addtheonions,then
cookgently,stirringregularly,for
about 15 minutesuntilsoftened
andcaramelised.Usea slotted
spoontotransfertheonionsto
theplatewiththesteak.
3 Addthemushroomstothepan
andfryfor5-6minutesuntilgolden
andjustcookedthrough.Add2 tbsp
brandyandbubbleovertheheat
toreduce.
4 Addthesouredcream,mustard
andstock,thenstirwelltocombine.
Bringtoa simmer,thenletthe
saucethickenandreduceslightly.
Returnthesteakandonionswith
