SUBJECT: THE PLASTIC PROBLEM
FROM: SUE GASKELL
I was interested in Katy Salter’s feature, ‘Could you go plastic free in the kitchen?’
[Jan, p46]. I agree that single-use plastic needs to be sorted out, but knee-jerk
reactions are not the answer. Plastic has been a lifesaver in many countries,
keeping food waste to a minimum, though we do now need to be more
environmentally friendly.
Paper is not the answer: the paper industry is polluting, and deforestation
is a major cause of climate change. Cotton is also not the answer:
research shows that cotton consumes the highest amount of
harmful pesticides compared to other crops. Similarly,
textile manufacturing units release hazardous
waste onto the nearby land and into rivers.
Yes, banish cling film by all means
but the usual suggested alternative of
beeswax wraps is expensive and –
oops, cotton again. So, what are
we to do? The answer isn’t easy.
See p126 for a roundup of cling film
alternatives

FROM: BRENDA CHAMBERLAIN
No one needs to buy a pancake
mix. Here’s my tip: to avoid lumps
and a lot of beating, don’t pour in
all the liquid until you have mixed
the flour, egg and a little milk to a
smooth loose paste with no lumps.
Then add the rest of the milk.

FROM: CHLOE RANDALL
I loved Katy’s bit about the
hijacking of Pancake Day. You
could also add that pancake mix
often comes in a plastic bottle –
while flour comes in paper bags;
eggs in cardboard boxes; and milk

  • if you look carefully – in re-useable
glass bottles. Save the planet and
    make your own pancakes!

SUBJECT: FOOD LABELLING
FROM: JULIA BARROW
I read the article ‘The sense (and
nonsense) of food labelling’ in the
February issue [p58] with a smile.
I always told my children when
they were growing up that the date
was “best before, not poisonous
after”. They are now 32 and
28 and still heed the advice.
